Super simple and delicious, our son Alex made an appetizer of Scallop Ceviche with Fisherman’s Wharf Gloucester scallops several nights ago.

Alex’s Scallop Ceviche Recipe

1 lb. sea scallops completely submerged in fresh lime juice

Dice 1/2 large white onion. Soak in a bowl with ice water to the reduce bitterness.

Dice 1 garden fresh tomato, 1 jalapeño, and cilantro to taste

Strain the onions.

Strain scallops but leave 1/4 of the lime juice.

Gently fold all ingredients. Add cubed avocado just prior to serving.

Several weeks ago Jesse Cook sent out a request to his fans to record clips of themselves, singing a simple melody that he composed. The song is soulfully beautiful and evocative. From Jesse – A couple of weeks ago I made a simple request: I asked you, my fans, if we could sing a song together from all over the world. Initially, I wasn’t sure if any of you would take me up on my offer, so I was completely unprepared for the flood of videos that overwhelmed my inbox.

Today I’m proud to share our creation, called “One World One Voice”.

I’ve never been a part of something like this before, or felt so connected to you, my fans. I feel honoured you put your trust in me, and I hope you will be as proud of the results as I am. As we traverse this difficult period, I draw solace from your generosity, your courage, and above all, your beautiful voices.

SIX WEEKS OF SOCIAL DISTANCING – WHAT ARE YOU DOING ON THIS RAINY DAY?

It’s been approximately six weeks since we were asked to social distance. Tragically, the number of new cases, hospitalizations, and deaths are still high in Massachusetts. Yet despite that, I think social distancing is still our best weapon against Coronavirus and that the epidemic would be much worse, unfathomably worse, if we were not.

Don’t you think the word physical distancing  more accurately portrays what we are doing? Gratefully, we are are still able to communicate with our friends and loved ones. The people working on the front lines are so much more deeply affected than we who are quarantined safely at home. I don’t only worry constantly about my friends who are nurses and midwives, but am also terrified something will happen to my Mom and Aunt who both live in Florida, terrified because I am not sure how I would be able to hep them if either were struck. And, hardest of all, our daughter is on the west coast.

I think of our predicament more in terms of physical distancing  and try to focus on the better aspects of the pandemic (if there is such a thing). For one thing, the country is virtually united in the fight. Nationwide polls show that eighty-five to ninety percent of all Americans, Democrats and Republicans, believe physical distancing and testing are our best defense against this terrible, terrible disease.

Today , as in practically every other day of the pandemic, I am organizing thousands of hours of footage. Every single film clip from years of ongoing projects do not speak to my new computer program. I don’t really mind though because it is providing the opportunity to also pick out the best clips for the Saint Joseph, Piping Plover, and Saint Peter film projects. One at time they have to be converted  however, I can do the conversions while simultaneously taking care of our granddaughter and working on Monarch film distribution avenues. Today with Charlotte we are planning to build a super duper deluxe Fort, paint pictures of Plovers and cupcakes (her favorite), draw with my fancy Prismacolor pencils (also her favorite), read a mountain of story books, and make cupcakes. Hopefully, that will take us to nap time <3

BEYOND FABULOUS – ALLIE’S BEACH STREET CAFE IS OPEN FOR TAKEOUT!

A quiet dinner for two – with no Charlotte and Alex for dinner, we decided to give Allie’s Beach Street Cafe’s take out a whirl. Along with several other fine Cape Ann restaurants, it is now at the top of our list. So nourishing and so delicious, country French cooking is pure comfort food, especially welcome after a cold damp drizzly day.

Tom had the baked haddock, with potatoes and green beans, all cooked to perfection and he LOVED that. I had the most extraordinarily huge serving of the most delicious beef stroganoff. So huge I am having the second half for lunch. The beef was melt in your mouth tender. The mushrooms and noodles were a rich chocolate brown, full flavored with absorbing the outstanding wine/beef/creamy sauce. I am crazy about creamed spinach (I know, it’s a little weird) but creamed spinach made with fresh spinach is amazingly delicious and Allie’s is just that.

SO EXCITED THAT FISHERMAN’S WHARF GLOUCESTER HAS ADDED GREY SOLE FLOUNDER TO THEIR CURBSIDE PICK UP!!

One of my family’s favorite fishes is Grey Sole Flounder and we cook in the simplest way.

Rinse the filets, slightly pat dry and dip in flour, with salt and pepper to taste. Sautee in a hot skillet in butter (never substitute butter for oil*) that has almost turned brown. Cook for several minutes on either side. While preparing the fish, turn a  second skillet on very low and melt butter with thinly sliced almonds and a pinch of salt. Cook slowly until slightly browned.

Remove fish from pan, slather with toasted almonds slices and serve with lemon wedge. This is the classic French dish Sole Amandine, which I learned to cook when I worked in French kitchens on Newbury Street, back in the day 🙂

*I’ve tried substituting oil for butter, and many combinations of, and it just does not get that beautiful delicate brown crusty flavor.

The F/V Midnight Sun captained by Tommy Testaverde jr. and crew fought through some pretty rough weather to make these available for us. Wonderful hopeful news for our Good Harbor Beach Piping Plovers. The City has created a safe zone in the spot where they are attempting to nest. Thank you Mayor Sefatia and Gloucester’s DPW for installing the symbolic roping. We need signs and hopefully they will be along very soon.
